No Bake Cookies

When I'm stressed, when I'm sad, when I can't handle being a mother anymore, I have a tendency to drown my attitude in chocolate.  In chocolate, no bake cookies to be exact.

I don't know what it is about this cookie that just seems to make life so much better.

It could be that they are filled with sugar.
It could be that someone secretly sneaks some addictive substance into my cookies...chocolate.

I don't know.  But these are definitely my "Go To" cookies.  The ones that I make when no one is home and I can't hide all evidence of making them as I sit in my closet chowing them down.

I'm sure we all have a cookie, or dessert, or treat that solves all of life's problems.  If you don't, please don't tell me.  Just let me live in my little cookie world here.

If you don't have one, I'll let you "share" mine, or at least I'll share the cookie recipe with you.


Start by adding 1/2 cup of milk, 1/2 cup of butter, and 2 cups of sugar in a medium sauce pan.  Stir until the sugar and milk are combined.  Cook on medium heat, stirring occasionally until the butter melts and the mix begins to boil.

Boil cookie ingredients at a rolling boil for 1-3 minutes.  I found that when I live in a moist climate I boil for less than I need to hear in dry, high elevation Colorado.

Add 3 cups of oats, 1 cup of coconut, and 4 Tablespoons of cocoa powder to a bowl while waiting for mix to boil.  Have 1 teaspoon Vanilla ready to go into the mix too.

How-to-make-No-Bake-Cookies

When your cookies are done boiling, dump dry mixture into the sauce pan.  Add your vanilla and stir well.  It helps to have everything ready to go since your mixture will start to harden not long after it's done boiling.

Use a spoon or Cookie Scoop  (I have this Baker's Secret Cookie Dough Scoop from amazon and I love it), scoop your cookie dough into balls on a piece of wax paper.  Allow them to dry and harden at room temperature.  If your boiling time is right, you'll have hard cookies within 15 minutes, if not, it will take a little longer.
