One of the greatest joys of having a house again, is the oven. While living at the hotel was nice and we did have a lot of amenities, we really missed being able to bake. I know we are a little too addicted to sweets, but it's one of the joys in our life and we missed it.
So the other day, we were baking chocolate chip cookies. We love these cookies. I've shared the recipe as a printable at the bottom of the page, if you are looking to try a new chocolate chip cookie recipe, but it's been my experience that most people like their "family recipe" and don't want to try new ones.
I like our recipe because it has oats in it, so the cookie has some texture and interest when you bite in to it. But I know everyone is different.
Anyway, we were making cookies and the Daredevil (my 15 year old son as he's known here) decided we weren't making cookies fast enough. So he dug out the ice cream scoop and proceeded to make cookies that were the size of our fist.
I admit, I was a bit dubious as to how they would turn out, but after a few timing errors, we got the cookie to come out soft, gooey and delicious. While we were eating them, we had to open the milk and get out the ice cream as a celebration.
You can imagine what happened from there. These cookies that are GINORMOUS were turned into ice cream sandwiches.
You're probably thinking, duh. But we had never done that before. Why? Who the heck knows? But I'm slapping myself now, because we are totally addicted to these things. They are like manna from heaven around here. (And so I only managed to get one saved to take pictures of.)
They were super easy to make as you may imagine.
We took our favorite chocolate chip cookie recipe (but I imagine you can use it for just about any cookie type) and used a regular ice cream scoop to dish out 6 mounds of cookie dough on to a cookie sheet. Cook in a preheated oven at 350 degrees for 15 minutes.
With our recipe, the dough will be set around the edges but slightly mushy in the center. This makes them super soft and as they cool they will set up with no problems.
Allow the cookies to cool and then scoop 1 to 2 scoops of your favorite ice cream flavor on to one of the upside down cookies. Place another cookie on top and mush down enough to secure the cookies and ice cream together.
Now enjoy, and don't blame me if you become completely addicted to these during the summer heat. Especially since it means you don't have to go buy the over priced treats at the store or through the Ice Cream truck. You can enjoy them anytime, even when the kids are asleep as a late night snack!
Here's my Chocolate Chip Cookie recipe, the Chocolate Chip Ice Cream Sandwich Recipe, and a double printable in case you use a 1/2 page recipe binder like I do. (FYI, one of the double recipes is up side down because this allows me to have the white paper edge on the side that I poke the holes through when I bind my recipes. It's just a way to make it a little prettier.)

Shopkins Cookie Cake Party Favor Printable
How cute is this Shopkins Cookie printable cake? With it's cute smile and easy directions, you can put this party favor cake together in less time than it would take you to make an actual batch of cookies. And there's way less clean up too!
As you know, I have boys. Rough and tumble boys who love MMA, Minecraft, Soccer, and doing anything they can to stress Mom out. My daughter is the oldest of all the kids and is out of the house. So I don't have little girls at home. So I don't understand the Shopkins craze.
But I know it is a craze. I see it on Pinterest everywhere. I even started a Shopkins Party Board on Pinterest to collect ideas and figure out the little girl shopping treats.
I still have no clue, but for those of you who do, I am working to draw a little bit closer to ease your pain. I have created my first Shopkins printable party favor. I took the crazy cute cookie and turned him? her? into a printable party cake.
If you haven't seen my printable cakes before, I've shared a few with you. They are kind of a pain to make, especially since I'm printer-less and can't check to make sure everything has lined up correctly.
There are 12 pieces of cake in the zip file that comes with this party favor printable. You have to download, save, and unzip the file to be able to print each cake piece. When you do, print them on to heavy card stock and cut out along the outside edges. Score along the inside edges to create a 3D cake piece. Fold, glue, fill, and piece all 12 pieces together for a cute little cookie cake.
The zip file is hosted on Dropbox, so you should be able to click here for the download link and give this cookie a try. It may not taste as good as the real thing, but it sure is super cute and would make a great party favor for your next Shopkins party.

We found out this week that Dear Hubby was selected for a promotion and we will be moving within the next 2 months. I'm starting to freak out as I look around the house and try to figure out how we can pack all this up and live without a house for a few months again.
I know it won't be as bad as I think, since we did this when we moved to Colorado a few years ago. But I also know the struggles of hotel living. There's silly things that I find I miss and one of those things is my oven. I know I'll miss the baking and yummy treats we usually make around here.

I feel like it's been a LOOOOONNNNGGG week.
Monday morning little things started going wrong. I kind of felt like I was in the Dr. Seuss book "Wacky Wednesday
.* " You know how he wakes up and the shoe is on the wall and things just get weird and crazy after that? That was my whole week.
It ended with my Dear Hubby getting half of his wisdom teeth pulled this morning. So I've spent all day "babysitting" him and trying to keep him from pushing himself too much while he heals.
So let me say, it's been a long week.
I guess that is why when looking at all the great projects you guys shared last week on Dare to Share Saturday, I was drawn to the cookies. What more perfect food is there to comfort you after a crazy week?

Brownie cookies? with eyes? Whoa, hold the beaters! With Daredevil's dream of opening a Brownie store still in the works, we were attracted to these brownie cookies. But I admit, I pushed the idea under his nose when I discovered it was another reason to make buttercream frosting. (The most amazing frosting in the whole wide world.) So don't doubt our beaters will be super busy this weekend trying these cookies.
I know it's not Halloween anymore, but how could I not feature these? They are so fun looking and after trying Milano Cookies on my one and only long distance flight, I am in love. (But not enough to pay that crazy price for only a few cookies.) But these great graveyard bites might make me rethink my purchasing decision even in the midst of Thanksgiving.
I'm not sure if it was the Mint Chocolate chip ingredient that attracted me to these cookies, or if it was the idea that maybe there's a chance (however small) that my teenagers wouldn't eat them all in one sitting before I'd even finished slaving away at the oven to make them. Either way, I knew I had to add these cookies to my "yummy" list.
Okay, these are my most "favoritest" cookies of all time, space, and eternity. They are my go-to cookie if I'm sad, mad, happy, excited, or celebrating. No cookie round up would be complete without sharing these with you again, after all, I'm afraid you won't get any from me in any other way.
Okay, I know this isn't technically a cookie, but if you cross your eyes and eat enough of it, you can convince yourself it's just one really big, filled cookie. I had to add this one to our cookie recipe round up since Pecan Pie is my Dear Hubby's favorite and I am not a fan, but add the chocolate addition and I'm totally in and may even surprise him with this huge chocolate pecan pie "cookie" for Thanksgiving.
