Don't take boring Christmas cookies to your Cookie Exchange party! Take these super cute Gingerbread man chocolate graham cracker cookies instead. He's so cute he'll be wowing the party guests and running away with the show.
It's been on my bucket list for a long time. One of those "I've always wanted to..." moments. But I've never done it.
What is the earth shattering thing that will make my Christmas complete this year you may ask?
A Cookie Exchange.
Can you believe it? I've never been to one. In all the party circles I run, all the parties that I've thrown, all the Christmas fun I love to do...I have never been invited to a Cookie Swap.
But this is the year...and it's tonight.
So what kind of cookies should I bring? Our favorite Chocolate Chip cookie? Pumpkin Chocolate Chip Cookies? No Bake Cookies?
Nah...I need something to wow the crowds and make them want to invite me again...

With the thought of crossing this new experience off my bucket list, I decided to make something
new and different.
Okay, maybe not TOTALLY new and different...
If you came to my 80s Video Game party, you will probably have seen these cookies before to some degree. They were originally Frog Log Cookies, but have been updated for the season as little Gingerbread men. And didn't they turn out just adorable?
To make these cookies, you'll need:
- Graham Crackers
- Milk Chocolate Frosting
- Milk Chocolate Melting Wafers
- White Chocolate Melting Wafers
- Mini M&Ms
- Gingerbread Man Cookie Cutter (1 1/2 inches by 2 inches)
- Chocolate Pen
- Wax Paper
Use the cookie cutter to cut out the gingerbread men. I found working in batches of 8 worked best. If the crackers get too cold towards the end, pop them back in the over for 30 seconds and finish working.
Extract the Gingerbread men and allow to cool.
While the next batch is warming in the oven, frost one gingerbread man with chocolate frosting. Add another on top to form a sandwich cookie.
Repeat until all your cookies are done. (I got 13 cookies out of one full package of graham crackers.)
In a glass bowl, warm up the chocolate melts in the microwave by heating them in 2 minute increments on 50% power. Stir the chocolate in intervals until smooth and melted.
Drop the sandwich cookie into the chocolate and cover completely. Use a fork to remove the cookie. Smooth the edges by tapping the forked cookie on the side of the bowl until excess chocolate comes off and the chocolate is smooth.
Lay the chocolate cookie on wax paper to allow to cool and dry.
Once the chocolate has dried on the cookie, dip the end of a toothpick into the remaining melted chocolate and add M&M buttons to the gingerbread man.
Here's the fun part....get out your chocolate pen and go to town on the cookies.
I have to admit, I bought this chocolate pen on a whim and this was the first time that I had played with it, but it is the most AWESOME craft tool I have played with in a while.
You fill the end with melting wafers and microwave it to warm them up. The tool comes with 2 tips. I chose the smaller one and used it to make little frosting squiggles on the hands and feet of the gingerbread men.
My son wanted a turn and had a blast making all kinds of designs on his cookies and then on the wax paper. He wrote his name and drew all kinds of fun art in the chocolate and then enjoyed eating them. We probably had WAY to much fun with this tool and will be using it again as soon as we can find a reason!
