3 Summer Salads and Dare to Share Saturday

Okay, I say that I'm on Vacation, but it really just means I'm doing the same things--cooking, cleaning, taking care of kids---in a different environment.  It's been nice because I've been able to spend the last month with my parents and two oldest kids.  I sure have missed them since they moved out, but it also means they all want mom to take care of them and cook for them.

The Perfectionist is especially enjoying this time with mom this summer since he's going away to college in a few weeks and will be living in an apartment with a bunch of other guys.  It means he'll have to start cooking and cleaning on his own.  As well as paying for housing...

Which leads me to asking you guys a HUGE favor.  He's entered an essay in for a housing scholarship to his apartment complex.  It's been narrowed down to about 15 essays and the one with the most facebook likes wins a year of rent free.  This would be a HUGE help to us.  Would you mind jumping over to facebook and liking his essay?

In the meantime, I've been doing a lot of cooking in the Texas heat.  We've taken to eating Chicken Salad and Taco Salad a lot since it doesn't heat up the kitchen too much.  So I was super excited to see so many Summer Salad recipes at last week's Dare to Share linky party.  I am hoping to add some of them to our dinner schedule this week to keep the heat down and the hunger of my 3 boys at bay.
